Alto Italian Restaurant and Bar – Wild Boar Stew
Ingredients:
- 5 lbs cubed wild boar shoulder (pork can be substituted)
- 2 carrots-large dice
- 2 onions-large dice
- 4 ribs celery-large dice
- 5T. minced garlic
- 3 cups good red wine
- 4T. tomato paste
- 2 bay leaf
- 2T. dried thyme
- 1 large sprig of rosemary-leaves removed and chopped
- salt & pepper
- water as needed
- olive oil as needed
Directions:
- In a 4 qt pot, heat on medium high heat with a couple tablespoons of olive oil.
- Season the wild boar with salt and pepper, and brown on all sides.
- Remove the meat and set aside.
- Add the onions, celery, and carrots.
- Cook for about 5 minutes or so.
- Add the garlic, tomato paste and bay leaf and cook for another minute.
- Add the wild boar back in along with the rosemary, thyme, red wine and enough water to just cover everything.
- Cover and cook at a low heat or place in a 325 oven for about two hours or until tender.
- Adjust the seasoning with salt and pepper to taste.
